'Smoked Ribeye Steak in the Masterbuilt Smoker with Bacon-Maple Butter'

'Today\'s recipe will show you how to make a smoked ribeye steak on the Masterbuilt Electric Smoker. We\'ll start out with smoking in the Masterbuilt until the internal temperature is 120 degrees F. Then we\'ll move the ribeye steak to a cast iron skillet and sear it to finish. Wait there\'s more. We will also make a bacon-maple butter to go with the ribeye.  Ingredients  • 2 lb ribeye • 1.5 tablespoons Virginia Coastal Steak Rub; more info here https://www.armadillopepper.com/products/virginia-coastal-premium-steak-rub (or your favorite steak rub) • 1 stick salted butter at room temperature • 2 pieces of fried bacon, chopped finely • 1 teaspoon real maple syrup • 2 tablespoons canola or vegetable oil  Recipe Instructions 1. Mix the butter, bacon and maple syrup together in a bowl.  2. Move the butter mixture to a piece of plastic wrap or parchment paper.  3. Roll the butter mixture up into a mini-log and refrigerate for 1 to 2 hours, so it can get firm.  4. Set the Masterbuilt or your smoker temperature to 225 degrees and add some oak wood chips (or your favorite wood).  5. While the smoker is heating, season the Ribeye steak with the Virginia Coastal Steak seasoning.  6. Place the ribeye in the Masterbuilt and cook until the internal temperature is 120 degrees F for a medium rare steak. If your ribeye is thinner, then you will need to cook the steak closer to 115. If it’s 2 to 2.5 inches, then 120 will be fine. The smoking time  took about 50 minutes.  7. Heat the oil on high heat in a cast iron skillet. When the oil is hot, place the ribeye in the skillet and sear each side for approximately 1 minute or until you have a nice crust. After one side of the steak has browned, add 2 tablespoons of the bacon maple butter to the skillet. Spoon the butter over the steak while cooking. Don’t let the internal temperature rise above 127-128 degrees F for medium rare.  8. Remove the ribeye from the heat. Add two or three small slices of the butter to the top of the steak and let rest for 10 to 15 minutes.  9. Serve!
