By the way, to make Super Meal in game you combine artichokes, bok choy, and crannberries. ✦ Subscribe: http://bit.ly/2keGDCn ✦ Support on Patreon: https://www.patreon.com/jammycooks89 ✦ Facebook: https://www.facebook.com/jammycooks89 ✦ Twitter: https://twitter.com/jammycooks89 ✦ Instagram: http://bit.ly/2lgDqlP What you need: No-stick spray 1/2 bok choy 1 tsp canola oil 1 tsp lemon juice Pinch of salt 1/2 tsp red pepper flakes 1 cup artichoke hearts in oil, pat dry Handful of dried cranberries 1/3 cup cherry tomatoes 3/4 cup cooked brown rice or other grain Dressing: 1/2 TBL sherry vinegar 1/2 TBL maple syrup 2 TBL artichoke can oil Salt and pepper, to taste Preheat oven 450 degrees. Prep a small baking sheet with no stick spray. Place drained canned artichokes directly on the pan. Roast for 5-10 minutes or until the bottoms start to turn golden brown. Remove from oven carefully, flip all pieces, and roast for about 3-5 minutes more. Place cooked artichokes aside. Slice a bok choy in half. Place on the same sheet you cooked the artichokes on. Drizzle on the oil, red pepper flake, lemon juice, and a pinch of salt. Toss the bok choy in the pan juices and place in the oven. Roast for 5 minutes, flip and cook for 3 minutes more. Set aside. Slice grape tomatoes lengthwise, set aside. For dressing: mix together sherry vinegar, maple syrup, and artichoke can oil until combined. To assemble super meal: On a medium plate or bowl, place bok choy at both ends. Place cooked brown rice in the middle. Dot cooked artichokes across the center, and tomatoes at the top. Sprinkle dried cranberries around the bottom. Finish by drizzling dressing over salad. Mix and eat, or eat all pieces individually. Can be eaten cold, room temp, or hot.'
