Sirloin, rib eye or brisket are frequently used cuts of beef for the dish.  Before cooking, the meat is marinated to enhance its flavor and tenderness with a mixture of soy sauce, sugar, sesame oil, garlic, ground black pepper, and other ingredients such as scallions, ginger, onions or mushrooms. Sometimes, cellophane noodles are added to the dish.  Japchae is a sweet and savory dish of stir-fried glass noodles and vegetables. Japchae is typically prepared with dangmyeon, a pale grey, semi-transparent, chewy and elastic noodles made from sweet potato starch. They are also known as \"glass noodles\", \"cellophane noodles\", or \"sweet potato vermicelli\". The noodles may be soaked in water before cooking. The assortment of vegetables in japchae may vary, with typical ingredients including carrots, spinach, onions, scallions and mushrooms. Both beef and pork are commonly used for japchae.
