'Making Megumi\'s Dorayaki! Not as Simple as It Looks!'

'Hey y\'all, I don\'t make pastries or sweets often cuz I don\'t think I\'m very good at it, but this one turned out pretty well! The shiroan, especially, tasted really good, in my opinion.   Shoutout to the homie, J Kid, for providing me with my BGM for this video, I\'d appreciate it if y\'all checked out his channel and subscribed. https://www.youtube.com/channel/UCEsj-9TH0XKfFpHtS3zW9QQ  [RECIPE] Ingredients: Pancake 150g Flour 1 tbsp Baking powder 90g Wasanbon sugar* 3 Eggs 1 tsp Mirin 1 tsp Honey 100g Silken tofu Oil Apple Butter ½ Apple ½ Lemon (1 tbsp Lemon Juice) 6 tbsp cold Butter Filling Shiroan (handmade or store bought) 16oz Lima Beans 1 cup Sugar 1 tsp Salt 2 Apples 4 tbsp Sugar 2 tsp Lemon Juice ½ cup Apple Jam 1 tbsp finely diced Ginger  Recipe: Preparation 1. Place beans in a bowl and cover with plenty of water, leave to soak overnight (not in fridge)  Filling 1. By now, the beans’ skins should be easily removed by hand. Remove all of the skins. 2. Place beans into a pot and cover with just enough cold water to cover the beans 3. Bring to a boil until foam starts to form 4. Pour beans into a sieve or colander to drain the water. Rinse the pot and replace the beans inside, again adding just enough cold water to cover the beans 5. Cover with a lid slightly ajar, and simmer for 1.5 - 2 hours. If you can easily crush the beans with your fingers, it’s done. 6. Drain the water but save some of it for later 7. Use a food processor to puree the beans, adding some of the water from the previous step if it’s too dry 8. Place the puree into a pot with the sugar and salt and heat to medium-low to dissolve the sugar. 9. Continue cooking for 15 - 20 minutes, keeping a close eye on it to make sure it doesn’t burn. The moisture will evaporate gradually and eventually, when it becomes thick like a paste, it will be done. 10. Dice apples and add to a pot with sugar and lemon juice 11. Simmer and reduce until all the liquid has evaporated 12. Mix into shiroan and divide into 6 equal portions  Apple Butter 1. Grate apples and mix in bowl with sugar and lemon juice 2. Put apple mixture into a pot and bring to a boil 3. Reduce and simmer for 20 minutes, cook mixture until it becomes thick 4. Remove from heat and add butter, whisking slowly or shaking the pot until butter becomes incorporated. The key is to cover the butter as much as possible. 5. Let cool  Apple Ginger Jam 1. Finely dice ginger 2. Mix ginger into the jam  The Pancake 1. In a bowl, beat eggs until foamy 2. Add sugar in thirds, whisking as you add it. Mix until peaks form 3. In a separate bowl, use a hand mixer to blend tofu until smooth 4. Add mirin and honey and mix well 5. Fold tofu mixture into beaten eggs 6. Sift flour and baking powder into the folded mixture, fold carefully 7. On a non-stick frying pan, spread ~1 tsp of oil over the surface and heat to low-medium heat 8. Pour enough batter to make an approximately 4” pancake, heat for about 2 minutes 9. Flip pancake to the other side and cook for about a minute 10. Set pancake aside and repeat steps g - i until batter is done  Dorayaki 1. Take two pancakes, spread apple butter on both, on the lighter colored sides 2. On one pancake, add one portion of the apple shiroan, and add a spoonful (about 1.5 - 2 tbsp) of apple confiture on top of the shiroan 3. Place the other pancake on top and close the dorayaki 4.
